Smooth, chocolaty pudding that melts in your mouth. Full of flavor. Free of guilt. Your body will thank you for eating this Avocado Protein Pudding made of avocado, protein powder, cocoa powder, maple syrup, and almond milk.
One of my favorite things about elementary field trips was getting to pick out my favorite snacks at the grocery store for my lunch box. And of course, I always had to have Snack Pack pudding. I blame this obsession from my sister who started the trend first.
It was until years later that I learned how bad those little pudding packs were and soon enough they were obsolete from my field trip cooler.
If only I had known how to make this creamy protein avocado pudding back then. It’s rich in flavor and ingredients.
Here’s what you need
Take out your immersion blender. (A regular food processor or blender will work fine too.) You’ll also want a flat bottom bowl or jar to mix everything. Be sure it has sides tall enough that the powder doesn’t go flying when you turn the blender on. You’ll want a spatula to scrape the sides of the bowl so you get every last glob of pudding.
Avocados are a great source of healthy fat and fiber. This helps absorb nutrients from plant foods. They’re packed with potassium, Vitamin K, Vitamin C, and Vitamin B. Also they’re delicious and that’s a good enough reason for me to eat them.
From the pantry, take out unsweetened cocoa powder and chocolate protein powder. From the fridge you’ll want to grab almond milk and maple syrup.
Time to bring home the pudding!
- 1 medium avocado
- 1 scoop chocolate protein powder
- 2 tbsp unsweetened cocoa powder
- 3 tbsp maple syrup
- 1/4 cup almond milk
- Scoop the avocado out and put it into the dish or blender. Mix until mostly smooth.
- Add the cocoa powder, protein powder, syrup, and milk. Blend until there’s a creamy consistency.
- Makes about 1 cup. Enjoy!
