When the weather cools down and the leaves begin to fall, it just feels right having a pumpkin spice latte cradled in your hands and a scarf wrapped around your neck.
I love fall—always have, always will. But pumpkin? That’s a different story. I have not always loved pumpkin. One time in elementary school around Thanksgiving, they served mini pumpkin pies at lunch. They were so cute; I couldn’t help but put one on my tray. When I realized it was pumpkin pie, I had no intention of eating it—my taste buds had not developed a liking for pumpkin yet. When I finished eating, I got up to dump my tray but was quickly stopped by the lunch monitor.
“Chelsea, you took a pumpkin pie. You have to eat it.” – Lunch Monitor
“But I don’t like it.” – Me
“Then you shouldn’t have taken it. You’re not allowed to go to recess until you eat the pumpkin pie.” – Lunch Monitor
I sat in the cafeteria, stand-off style, with the lunch monitor as she waited for stubborn little me to eat that pie. Midway through recess I gave in. I took one bite and bolted to the garbage. I think the lunch monitor thought I vomited, so she apologized for making me eat the pie and let me go play.
Dramatic, I know. I really didn’t like pumpkin.

Here’s how it’s done
Preheat the oven to 350°F. Gather the ingredients, and dump everything but the chocolate chips into the blender.
Blend until smooth. Stir in the chocolate chips.
Coat a pan with cooking spray, and evenly distribute the batter into a 12 cup pan.
Bake for 18-20 minutes.
Let cool for 10 minutes before devouring them.
Healthy Pumpkin Chocolate Chip Blender Muffins
- 2 ¼ cups old fashioned oats*
- 2 eggs
- 1 cup pumpkin puree
- ½ cup maple syrup
- ¼ cup peanut or almond butter
- ¼ cup milk
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1 teaspoon baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp vanilla extract
- ½ cup chocolate chips
*For added protein, use 2 cups of oats and ¼ cup vanilla protein powder.
- Preheat oven to 350°F. Coat a muffin tin with cooking spray or muffin liners.
- Add all the ingredients except the chocolate chips to the blender. Blend until smooth. Blend the oats first to create an oat flour if you want the muffins extra smooth.
- Stir the chocolate chips into the batter.
- Pour batter into the muffin tins. Makes 12 muffins.
- Bake for 18-20 minutes. Let cool for at least 10 minutes before you have at them.
