My two favorite treats? Carrot cake and banana bread. If I had to decide between one or the other, I’d have analysis paralysis for days! But when you put the two together, you don’t have to make that difficult decision. You get the best of both worlds!

This healthy treat has a little bit of crunch and a whole lot of flavor. Its creamy frosting consists of four simple ingredients and is as healthy as a frosting could be. We’re so excited to share this easy and delicious recipe with you!

Gather the following ingredients for the bread:

  • Flour
  • Vanilla protein powder (optional)
  • Baking soda
  • Salt
  • Cinnamon
  • Greek yogurt
  • Bananas
  • Eggs
  • Maple syrup
  • Vanilla extract
  • Carrots
  • Shredded coconut
  • Chopped walnuts

Mix together the flour, protein, baking soda, salt, and cinnamon in a large bowl. In a small bowl, combine the yogurt, bananas, eggs, syrup, and vanilla. Chop the carrots in a food processor. Coat a 9×5 loaf pan with cooking spray.

Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in the carrots, coconut, and walnuts.

Pour the batter into the pan and bake for 30-45 minutes at 350°F. I give you permission to lick the bowl clean when you’re done—we both know you were thinking it. When a toothpick inserted into the bread comes out clean, it’s done!

For the creamy frosting you’ll need:

  • Neufchâtel cheese
  • Maple syrup
  • Cinnamon
  • Vanilla extract

Use a hand mixer to combine the frosting ingredients until smooth. Once the bread has completely cooled, evenly spread the frosting on top.

Slice it into eight pieces and store in an airtight container in the refrigerator. Trust me, it tastes so good when it’s chilled. If you insist on having a warm slice, don’t add the frosting to the top of the bread—add it after you’ve warmed your individual slice.

Ingredients

For the Bread
  • 1½ cups flour*
  • 1½ tsp baking soda
  • ½ tsp salt
  • 2 tsp vanilla
  • ½ cup Greek yogurt
  • 2-3 ripe bananas, mashed
  • 2 eggs
  • ½ cup maple syrup
  • 1 tsp cinnamon
  • ½ cup carrots, shredded
  • ½ cup shredded coconut
  • ¼ cup walnuts, chopped
For the Frosting
  • 8 oz. of Neufchâtel cheese
  • ¼ cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

*For added protein, use 1¼ cups flour and ¼ cup vanilla protein powder.

Directions

  1. Preheat oven to 350°F and coat a 9×5 loaf pan with cooking spray.
  2. In a large bowl, mix together the flour, protein powder, baking soda, salt, and cinnamon.
  3. In another bowl, lightly beat the eggs, bananas, yogurt, syrup, and vanilla until well combined.
  4. Pour the wet ingredients into the dry ingredients and gently stir until it is mixed. Fold in the carrots, coconut, and walnuts.
  5. Pour the batter into the loaf pan and spread evenly. Bake for 30-45 minutes or until a toothpick inserted into the bread comes out clean.
  6. Remove from oven and let cool before adding the frosting.
  7. To make the frosting, add the Neufchâtel cheese, maple syrup, cinnamon, and vanilla to a bowl. Blend with a hand mixer and rubber spatula. Once the bread has cooled, spread the frosting evenly on top of the bread.
  8. Slice and serve! Store in an airtight container in the refrigerator.
