Gluten-Free Oven Baked Chicken Strips

Coconut flour crusted chicken baked to perfection. Dunk them in your favorite dipping sauce—over and over and over again.

Chicken strips and chicken nuggets were my go-to kids’ meal of choice. My sister would switch it up with a corn dog one time, burger the next, but I was always faithful to choosing chicken.

To this day, I almost always choose chicken at restaurants—it’s so good! Not to mention, we make chicken for dinner all the time. We like to get creative with how we make it and these Gluten-Free Oven Baked Chicken Strips are one of the many chicken recipes we make on the regular.

Let’s Get Started

Preheat the oven to 375℉. Put a layer of aluminum foil on a non-greased baking sheet. Cut 2 lbs of chicken into strips and set out two bowls to prepare the breading.

Whisk 3 eggs in one bowl and add ⅓ cup of coconut flour to the other bowl. Mix garlic powder, onion powder, salt, pepper, and Italian seasoning into the coconut flour.

Take one of the strips of chicken, coat it in eggs, and roll it in the flour mixture until it is lightly coated.

Place the strip on the baking sheet and repeat until all the chicken is on the pan.

Bake the chicken for 25-30 minutes. Enjoy with your favorite dipping sauce—ranch, BBQ, or maybe some left over Chik-fil-A signature sauce.

Ingredients

  • ⅓ cup coconut flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Italian seasoning
  • 3 eggs
  • 2 lbs of thawed chicken (about 3 chicken breasts)
