As a lover of all things chocolate chip cookie related, edible cookie dough has never been easier or healthier. When I don’t feel like running the oven or dirtying mixing bowls and cookie sheets to make chocolate chip cookies, this recipe is my go to. There are only seven simple ingredients and two easy steps.
LET’S GET STARTED
Begin by draining and rinsing the can of chickpeas. Add all the ingredients, except the chocolate chips, into a blender or food processor. Combine until smooth.
Next, stir in the chocolate chips. Eat now, or let it chill in the fridge for half an hour for a more authentic cookie dough taste.
Store in an airtight container in the fridge. This should make about four servings—two if you’re super ambitious and hungry as Jackson and I have been. Whoops.
HEALTHY PALEO COOKIE DOUGH RECIPE
- 1 (15 oz) can chickpeas (drained and rinsed)
- ¼ cup tahini
- ¼ cup maple syrup
- ⅛ tsp salt
- ⅛ tsp baking soda
- 2 tsp vanilla extract
- ½ cup chocolate chips or chunks (dairy free optional)
- Combine all ingredients, except chocolate, in a blender or food processor. Blend until smooth.
- Stir in chocolate chips and store in an airtight container in the refrigerator.
This recipe makes four servings.
